Papdi Chaat Recipe: A Flavorful Street Snack

Popular Indian street snack papdi chaat is renowned for its spicy, acidic, and crisp flavors. It has a variety of fresh ingredients, crunchy papdi (fried flat puris), chilled yogurt, and tasty chutneys. All ages enjoy this dish, which is ideal as an appetizer or snack.

INGREDIENTS:

For the Papdi (Crispy Puris):

• 1 cup all-purpose flour (maida)

• 1 tablespoon semolina (sooji)

• 1/4 teaspoon carom seeds (ajwain)

• 1 tablespoon oil or ghee

• A pinch of salt

• Water (for kneading)

• Oil (for frying)


For the Chaat:

• 15-20 papdis (store-bought or homemade)

• 1/2 cup boiled potatoes, diced

• 1/2 cup boiled chickpeas (optional)

• 1/2 cup yogurt, whisked

• 2 tablespoons tamarind chutney

• 2 tablespoons green chutney (mint-coriander chutney)

• 1 teaspoon chaat masala

• 1/2 teaspoon roasted cumin powder

• 1/2 teaspoon red chili powder (optional)

• 1 tablespoon finely chopped onions

• 1 tablespoon finely chopped tomatoes

• Fresh coriander leaves, chopped

• Sev (thin gram flour noodles) for garnish

• Pomegranate seeds (optional, for garnish)


INSTRUCTIONS :

Step 1: Prepare the Papdi

a. In a mixing bowl, combine all-purpose flour, semolina, carom seeds, and salt.

b. Add oil or ghee and mix well until the mixture resembles coarse crumbs.

c. Gradually add water and knead into a stiff dough. Cover and let it rest for 20 minutes.

d. Roll out the dough into a thin sheet and use a round cookie cutter or a small bowl to cut out small discs (around 2-inch diameter).

e. Heat oil in a deep pan and fry the discs on medium heat until they turn golden and crispy. Remove and drain on a paper towel. Set aside.


Step 2: Assemble the Chaat

a. Place the papdis on a serving plate.

b. Add a spoonful of boiled potatoes and chickpeas over each papdi.

c. Drizzle a generous amount of whisked yogurt over the top.

d. Add tamarind chutney and green chutney, as per taste.

e. Sprinkle chaat masala, roasted cumin powder, and red chili powder for flavor.

f. Top with finely chopped onions, tomatoes, and coriander leaves.

g. Garnish with sev and pomegranate seeds for added texture and color.


Step 3: Serve Immediately

• Papdi Chaat is best enjoyed fresh to keep the papdis crisp. Serve immediately after assembling.
