Poha Recipe: A Simple and Flavorful Indian Breakfast

A common Indian breakfast dish, poha is constructed of flattened rice that has been seasoned with herbs, spices, and vegetables. It's a simple, light dish that's full of nutrients and is a great way to start the day. Ingredients:

• 2 cups flattened rice (poha)

• 1 medium onion – finely chopped

• 1 medium potato – peeled and diced

• 2-3 green chilies – slit or chopped (adjust as per taste)

• 1/4 cup roasted peanuts

• 1 teaspoon mustard seeds

• 1 teaspoon cumin seeds

• 8-10 curry leaves

• 1/4 teaspoon turmeric powder

• Salt to taste

• 1 tablespoon sugar (optional)

• 2 tablespoons oil

• Juice of 1 lemon (for garnish)

• 2-3 tablespoons fresh coriander leaves – chopped

• Sev or grated coconut (optional, for garnish)


Instructions:

1. Prep the Poha:

•Rinse the poha in a colander under running water for a few seconds. Gently fluff the poha using your fingers while rinsing. Be careful not to over-wash, as it can make the poha soggy.

•Let the water drain completely and set the poha aside. Add salt and sugar to the rinsed poha and mix gently.


2. Cook the Vegetables:

•Heat 2 tablespoons of oil in a pan over medium heat. Once the oil is hot, add the mustard seeds and cumin seeds. Let them splutter for a few seconds.

•Add curry leaves and green chilies, stirring for a minute until fragrant.

•Add the chopped onions and sauté until they turn soft and translucent.

•Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until they turn tender. You can cover the pan to help the potatoes cook faster.


3. Add Spices:

•Once the potatoes are cooked, sprinkle turmeric powder and mix well. You can add a bit more oil if needed at this stage to prevent sticking.


4. Mix in the Poha:

•Add the rinsed poha to the pan, gently mixing it with the vegetables and spices. Be careful not to break the poha too much. Cook on low heat for 3-5 minutes until everything is well combined and heated through.


5. Add Peanuts and Lemon Juice:

•Add roasted peanuts to the poha and mix well. Adjust salt if needed.

•Turn off the heat and squeeze fresh lemon juice over the poha. Stir to combine.


6. Garnish and Serve:

•Garnish the poha with freshly chopped coriander leaves and a sprinkle of sev or grated coconut for an extra crunch (optional).

•Serve hot with an additional wedge of lemon on the side.


Tips for Perfect Poha:

•Rinsing the poha: Rinse gently and don’t soak the poha in water. It should be soft but not mushy.

•Customization: You can add other vegetables like peas, carrots, or tomatoes for extra nutrition.

•Peanuts: Roasted peanuts add a lovely crunch. You can substitute them with cashews for a richer flavor.
