Spring rolls

Ingredients:

For the Filling:

• 200g (7 oz) ground pork or chicken (optional)

• 1 cup shredded cabbage

• 1 cup shredded carrots

• 1/2 cup bean sprouts

• 1/2 cup finely sliced mushrooms (shiitake or    button)

• 2 spring onions, chopped

• 2 cloves garlic, minced

• 1 tbsp soy sauce

• 1 tbsp oyster sauce

• 1 tsp sesame oil

• 1 tsp sugar

• Salt and pepper, to taste

• 1 tbsp vegetable oil (for stir-frying)

For the Wrapping:

• 20 spring roll wrappers (available in Asian      grocery stores)

• 1 egg (beaten, for sealing)

For Frying:

• 2 cups vegetable oil (for deep frying)

• For Dipping Sauce (Optional):

• 2 tbsp soy sauce

• 1 tbsp rice vinegar

• 1 tsp chili flakes

• 1 tsp sugar

• 1 tsp sesame oil

Instructions:

Step 1: Prepare the Filling

•Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.

•Cook the Meat (Optional): If using ground pork or chicken, add it to the pan and stir-fry until fully cooked and browned, breaking it up into small pieces. Once cooked, set the meat aside.

•Stir-Fry the Vegetables: In the same pan, add the garlic and stir-fry for 30 seconds until fragrant. Add the cabbage, carrots, mushrooms, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are slightly softened but still have a bit of crunch.

•Season the Filling: Add the soy sauce, oyster sauce, sesame oil, sugar, and a pinch of salt and pepper. Stir well to coat the vegetables in the seasoning. If you’re using meat, add it back to the pan and mix everything together.

•Cool the Filling: Remove the pan from heat and let the filling cool completely. This will make it easier to wrap the spring rolls without tearing the wrappers.

Step 2: Wrap the Spring Rolls

•Prepare the Wrappers: Place a spring roll wrapper on a clean surface with one corner pointing toward you (so it looks like a diamond). Keep the remaining wrappers covered with a damp cloth to prevent them from drying out

•Add the Filling: Spoon about 2 tablespoons of the filling onto the lower third of the wrapper, leaving space around the edges for folding.

•Fold the Wrapper: Fold the bottom corner of the wrapper over the filling, then fold in the two side corners to create an envelope shape. Roll the wrapper tightly toward the top corner. Brush the edges with the beaten egg to seal the spring roll. Repeat with the remaining wrappers and filling.

Step 3: Fry the Spring Rolls

•Heat the Oil: In a large pot or deep skillet, heat 2 cups of vegetable oil to 350°F (180°C). You can test the oil by dropping a small piece of wrapper into it; if it sizzles and floats to the top, the oil is ready.

•Fry the Spring Rolls: Carefully add the spring rolls to the hot oil in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes, turning occasionally, until they are golden brown and crispy.

•Drain the Rolls: Remove the spring rolls from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 4: Make the Dipping Sauce (Optional)

•Combine Ingredients: In a small bowl, mix soy sauce, rice vinegar, chili flakes, sugar, and sesame oil. Adjust seasoning to taste, and serve as a dipping sauce alongside the spring rolls.

Step 5: Serve

•Serve Fresh and Hot: Serve the spring rolls while they’re hot and crispy. They pair perfectly with the dipping sauce or your favorite chili sauce.

Tips for Making Perfect Spring Rolls:

•Crispy Wrappers: To get the crispiest spring rolls, make sure the oil is hot enough before frying. Fry in small batches to avoid lowering the oil temperature.

•Filling Variations: You can swap out the pork or chicken for shrimp, tofu, or just keep them vegetarian. Feel free to customize the vegetable filling based on your preferences.

•Freezing Tip: If you want to make spring rolls ahead of time, freeze them before frying. Lay them flat on a baking sheet in the freezer, and once frozen, transfer them to a resealable bag. When ready to cook, fry them directly from frozen (add a minute or two to the cooking time).

CONCLUSION:

Making homemade spring rolls is easier than you might think, and the result is a delicious, crispy appetizer that’s sure to impress. Whether you’re making them for a party or just enjoying a snack, this recipe is a great way to bring a little bit of Asian street food into your home.
