INGREDIENTS:
For the taco filling (serves 4):
• 500g ground beef (or chicken/pork)
• 1 tablespoon olive oil
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• 1 teaspoon paprika
• ½ teaspoon ground oregano
• Salt and pepper, to taste
• ½ cup tomato sauce (or chopped tomatoes)
• ½ cup water

For the tacos:
• 8-10 small tortillas (corn or flour)
• 1 cup shredded lettuce
• 1 cup diced tomatoes
• 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
• ½ cup sour cream
• ½ cup salsa or hot sauce
• Optional: Sliced avocado, jalapeños, lime wedges, fresh cilantro

INSTRUCTIONS:
Step 1: Prepare the Taco Filling

a. Heat the oil: In a large skillet, heat the olive oil over medium heat.

b. Cook the onions: Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.

c. Add garlic: Stir in the minced garlic and cook for another minute until fragrant.

d. Brown the meat: Add the ground beef (or your chosen meat) to the skillet. Break it up with a spoon and cook until it’s browned, about 7-10 minutes. Drain excess fat if necessary.

e. Season the meat: Add cumin, chili powder, paprika, oregano, salt, and pepper. Stir well to coat the meat with the spices.

f. Add tomato sauce and water: Pour in the tomato sauce and water, then stir to combine. Reduce heat and simmer for 5-7 minutes until the mixture thickens. Taste and adjust seasonings if needed.

Step 2: Warm the Tortillas

a. Warm in a skillet: Heat each tortilla in a dry skillet over medium heat for about 30 seconds per side until soft and slightly golden. Alternatively, you can wrap them in a damp towel and warm them in the microwave for about 30 seconds.

Step 3: Assemble the Tacos

a. Layer the filling: Place a spoonful of the taco meat in the center of each tortilla.

bAdd toppings: Top with shredded lettuce, diced tomatoes, shredded cheese, and your favorite extras like sour cream, salsa, and avocado.

c. Serve immediately: Fold the tacos in half and serve with lime wedges and fresh cilantro for garnish.

Tips for Perfect Tacos:

a. Tortilla choice: Corn tortillas are more traditional, but flour tortillas are softer and easier to work with if you’re new to making tacos.

b. Filling options: You can swap ground beef for shredded chicken, grilled fish, or even beans for a vegetarian option.

c. Custom toppings: Get creative with toppings like pickled onions, grilled peppers, or mango salsa to add a personal twist to your tacos.
