INGREDIENTS:

For the Meatloaf

1 lb ground beef

1/2 lb ground pork

1/2 red bell pepper, finely chopped

1 cup crushed Ritz crackers (approx 24 crackers)

1 medium onion, finely chopped

2 large eggs, beaten

1/2 tsp garlic powder

1 cup shredded cheddar cheese

1/2 green bell pepper, finely chopped

1/2 cup whole milk

1/4 tsp black pepper

1/2 tsp salt

For Topping

2 tbsp brown sugar

1 tbsp mustard oil

1/2 cup ketchup

INSTRUCTIONS:

Step 1: Preheat Oven

Set the oven temperature to 175°C (350°F). To make removal easier, grease a loaf pan or line it with parchment paper.

Step 2: Prepare the Mixture of meat

a. Combine the ground beef and ground pork in a large mixing bowl.

b. Add the red and green bell peppers, as well as the finely sliced onion.

c. Add the milk, beaten eggs, crumbled Ritz crackers, and shredded cheddar cheese.

d. Add garlic powder, salt, and pepper for seasoning.

e. To keep the meatloaf soft, don't overmix; just mix until all the ingredients are properly combined.

Step 3: Shape and Place in the Loaf Pan

a. Spoon the meat mixture into the loaf pan that has been prepared.

b. Don't pack it too tightly, but gently press it down to make sure it's even.

Step 4: Prepare and Combine the Topping

a. Combine the yellow mustard, brown sugar, and ketchup in a small bowl and stir until smooth.

b. Evenly cover the top of the meatloaf with this glaze.

Step 5: Bake Meatloaf

a. The meatloaf should be cooked through and have an internal temperature of 160°F (71°C) after an hour of baking in a preheated oven.

b. For added taste, you can broil the meatloaf for two to three more minutes to caramelize the topping.

Step 6: Slice, and Serve

a. Before slicing, let the meatloaf rest for approximately ten minutes.

b. When served, this helps it maintain its shape.

c. Serve with traditional sides like corn, green beans, or mashed potatoes.

CONCLUSION

Substitutions: Feel free to substitute ground turkey for the beef or pork if you prefer a lighter version.

For a Texture: Try adding small diced carrots or celery to the meat mixture.

Make-Ahead Option: Prepare the meat mixture in advance and refrigerate it, covered, for up to 24 hours before baking.
