Gajar ka halwa recipe

A tasty and fragrant dessert that works well for any occasion is gajar ka halwa. The affluent flavors of slow-cooked carrots are captured in this traditional dish, which makes it a memorable treat for family and friends.

INGREDIENTS

For 4-6 servings, you’ll need:

• 1 kg (2.2 pounds) red or orange carrots, grated

• 4 cups whole milk

• 1/2 cup sugar (adjust to taste)

• 4 tablespoons ghee (clarified butter)

• 1/2 teaspoon cardamom powder

• 1/4 cup chopped nuts (almonds, cashews, and pistachios)


INSTRUCTIONS

1. Prepare the Carrots

• Wash, peel, and grate the carrots. Use the fine side of a grater or a food processor for a smoother texture.


2. Cook the Carrots with Milk

• In a heavy-bottomed pan, add the grated carrots and milk.

• Bring it to a boil over medium heat, then lower the heat and simmer.

• Stir occasionally, allowing the carrots to cook until soft and the milk is almost entirely absorbed (this may take about 30-40 minutes).


3. Add Sugar and Continue Cooking

• Once the milk is nearly evaporated, add sugar and continue cooking.

• The mixture will become a bit loose as the sugar melts. Stir frequently until the mixture thickens again.


4. Add Ghee and Cardamom

•Pour in the ghee, stirring well so the carrots absorb the flavors. Add the cardamom powder, stirring to combine.

• Keep cooking until the halwa is glossy and the ghee begins to separate from the carrots.


5. Add Nuts and Garnish

• Stir in half of the chopped nuts and cook for another 2-3 minutes. Turn off the heat.

• Transfer the halwa to a serving dish, garnish with the remaining nuts, and, if desired, a few saffron strands for extra flavor.


6. Serve Warm or Cold

• Gajar ka Halwa can be served warm, straight from the pan, or chilled, depending on preference. It pairs beautifully with vanilla ice cream.


Tips:

Milk Powder or Khoya (Mawa): For a richer flavor, add 1/4 cup milk powder or 1/2 cup crumbled khoya after the carrots are cooked.

Condensed Milk: Replace a portion of sugar with condensed milk for a creamier texture.

Coconut or Dried Fruits: Add desiccated coconut or raisins for a unique twist.
