INGREDIENTS
For Rice
• 1 cup basmati rice
• 2 tablespoons ghee or clarified butter
• 2 cups water
• 1-inch cinnamon stick
• 3-4 cloves
• 2-3 green cardamom pods
• 1 bay leaf ( Tej patta )
• A pinch of saffron strands (soaked in 2 tablespoons warm milk)
• Salt as per taste
For toppings
• 2 tablespoons ghee
• 1 medium onion, thinly sliced
• 10-12 almonds (blanched and peeled)
• 10-12 cashew nuts
• 10-12 raisins ( kishmish )
• 1/4 cup pomegranate seeds ( for garnish )
INSTRUCTIONS
Step 1: Prepare the Rice
1. Use cold water to thoroughly wash the basmati rice until the water flows clear. After 20 minutes of soaking, drain and set aside.2. Heat two tablespoons of ghee in a pan with a heavy bottom.
4. Coat the drained rice with the ghee and spices by gently stirring it in.
5. Bring to a boil after adding two cups of water and a pinch of salt.
Step 2: Preparation for Toppings
1. Heat 2 teaspoons of ghee in a small pan. Sliced onions should be added and cooked until crispy and golden.
2. Take off and place on a paper towel to rest.
3. Add the cashews, almonds, and raisins to the same pan and cook until brown. Take care to avoid burning them. Put aside.
Step 3: Mixing the Pulao
1. To give the cooked rice a golden color and a delicate scent, gently stir in the saffron-infused milk.
2. Arrange the rice in layers on a dish. For more sweetness and texture, sprinkle it with the fried onions, almonds, raisins, and optional fruits like pineapple or apples.
Step 4: Garnishing and Servings
1. For a taste and color boost, add some fresh pomegranate seeds (optional).
2. Warm up and serve with your preferred curry, raita, or yogurt.
